Well, the bar staff at The Croke Park have you covered. While their cocktail menu is always filled with fabulous options, this year they have developed a particularly festive concoction. The Stilt Walker is the perfect choice if you love the fiery buzz of cinnamon, with rich, almondy undertones and a little citrusy hit.

It’s easy to make at home – you just need Fire Eater Cinnamon Liqueur, a feisty and powerful whiskey laced with cinnamon. Here’s the recipe…

Stilt Walker

• 35ml Fire Eater Cinnamon Liqueur
• 15ml Amaretto / Disaronno
• 35ml Orange Juice
• 35ml Pineapple Juice

Shake with ice and strain in to a chilled stem glass. Garnish with a sprinkling of cinnamon powder and a mint leaf.

If you’d rather someone else do the mixing, head into The Croke Park for a festive drink. The Christmas decorations are spectacular, and there’s no better place to get into the Christmas spirit than in The Sideline Bar, on a deep leather couch beside the fireplace. Add on a couple of nibbles from the bar menu and you’ll be happily ensconced in a cosy, festive bubble.
