It’s fair to say that juicing is having a moment. It seems like everyone is dashing around, green juice in hand, as they go about their business.

We announced the launch of The Juicery in all of The Doyle Collection hotels last week with a beautiful event at our flagship The Westbury, Dublin. But if you want to try your hand at making a juice at home, then we have a recipe for one of The Juicery’s most popular options, the ‘Vine’.

This juice will leave you brimming with health and is packed with greens, giving it a fresh, cleansing taste. The addition of avocado gives it a creamy vibe, and is also great for the skin and hair. Kale gives it an earthy flavour, and packs a fair nutritional punch. The cucumber adds a refreshing note, and there’s natural sweetness from the apple, too. Finished off with mint, this is a green juice that you’ll soon be addicted to!

The chefs in The Juicery use a Vitamix, which is an intensely powerful blender, which leaves you with an incredibly smooth juice.This particular juice uses both a juicer and a blender and will work with any juicer, though the results may not be quite as smooth as you’d find in The Juicery!

To make your own, you will need…

• 200g apple (try a variety for different flavours – roughly 2 green apples)
• 40g celery (a scant half a stalk)
• 12g kale (roughly half a handful)
• 12g cucumber (1/2 inch piece)
• 3 leaves of mint
• half of a ripe avocado
• 1/3 of a lime

Firstly, juice the apple, celery, kale and cucumber. Then, in a blender, combine with the avocado, lime juice and bruised mint leaves.

Pour over 3 ice cubes and garnish with a mint leaf.
