Craft Mocktails: Redefining Mixology at Doyle Bar

Step into  Doyle and you’ll find a meticulous selection of  three signature mocktailswhich redefine the art of non-alcoholic mixology. From the effervescent bubbles of the Free Fall Fizz—made with Seedlip Garden, chamomile syrup, lemon juice, and zero-proof sparkling wine--to the apple and ginger notes of the Free Kick, each mocktail promises to elevate any evening.

At  The Pembroke, the culinary experience is enhanced by  two reimaginedclassics. The Spiced Espresso No-Tini, blending Seedlip Spice, Lyre’s coffee original, agave syrup, and fresh-brewed espresso, offers a post-dinner caffeine kick. Meanwhile, the vibrant Hibiscus Mule, a mix of Seedlip Garden, lime juice, hibiscus syrup, rosemary, and orange cinnamon syrup, complements our diverse menu.  

A Sophisticated Selection of Zero-Proof Wines at The Pembroke

For those who prefer a good glass of wine, both Doyle and The Pembroke showcase a curated collection of sophisticated zero-proof wines, ranging from sparkling to white and red options. Create Doyle’s Beloved Dupont Temple at Home

One of the joys of mocktails lies in their simplicity. With the recipe below, craft your own version of Doyle’s Dupont Temple. A favorite among guests, this drink marries the tangy citrus of homemade lemonade with the sweetness of a cranberry juice float, resulting in a drink that’s as visually stunning as it is delightful to sip on.

To craft your own, you’ll need the following ingredients:

  • 0.25 oz of cherry syrup
  • 1 oz lime juice
  • 1 oz lemon juice
  • 1 oz simple syrup
  • Club soda
  • Cranberry juice

Method:

  1. Add a quarter ounce of cherry syrup to the base of a glass.
  2. Fill glass with crushed ice.
  3. Add equal parts lime, lemon and simple syrup to a shaker and shake hard.
  4. Double strain the homemade lemonade over crushed ice.
  5. Top with club soda, and float cranberry juice on top to give it three distinctly layers.
