The transition from winter to spring seems to have happened in a flash, and with the changing months, comes ever changing seasonal produce. At The Marylebone’s, 108 Brasserie, Executive Head Chef Russell Ford is embracing start of summer with a brand new ‘Dish of the Month.’

This June, you can enjoy the fresh combination of poached, line-caught wild salmon, accompanied by sea vegetables and an orange hollandaise. Line- caught salmon has so many more benefits than net-caught fish. Not only does it save hundreds and thousands of unwanted fish scooped up in the nets, that are usually discarded, but it also catches a better quality of salmon, making your dining experience both delicious and eco-friendly. 

We caught up with 108 Brasserie’s Executive Chef, Russell Ford, the man behind this ‘Dish of the Month;’

What was the inspiration behind this dish?
It’s quite simply a nice seasonal dish, light and healthy, and perfect for the summer time.

Why is this the perfect dish for Spring / Summer?
Wild salmon is fantastic in June; it has a short season so we want to showcase it when it is at its best.

What type of wine would be the perfect pairing for this dish?
A nice crisp white wine such as a Grüner Veltliner or Riesling

What is your secret to create the perfect hollandaise sauce?
A good vinegar reduction and make sure the egg yolks are cooked out enough (but not too much) this will help holding the butter and prevent it from splitting, freshen it up with a squeeze of lemon at the end, but for this dish we are using orange.

Located within The Marylebone, 108 Brasserie is the perfect place to enjoy the buzz of Marylebone Lane, one of London’s hippest neighbourhoods, as well as delicious British cuisine.

Lunch opening hours at 108 Brasserie are between 12pm-3pm, and Dinner is 5pm-10.30pm. This Dish of the Month is priced at £30 and is available throughout the month of June 2016.
