Make Doyle’s signature Waterford cocktail, The Crimson Quay, at home this March
Irish Heritage Month calls for a cocktail with a story. Enter the Crimson Quay, a signature serve from Doyle Bar, created in partnership with Waterford Crystal and presented in their iconic Lismore Martini glass.
Crimson nods to the richness of Redbreast 12 Year, while Quay (pronounced key) evokes the stone harbors of Ireland’s historic port cities—where barrels arrived by tide, time shaped flavor, and craft was everything. Spirit-forward and quietly complex, this cocktail is a tribute to Irish tradition, designed for slow sipping and meaningful moments.
The Recipe: Crimson Quay
Ingredients
- 1.5 oz Redbreast 12 Year
- 0.75 oz Fonseca Tawny Port
- 0.75 oz Sweet Vermouth
- 3 dashes Orange Bitters
Method Stir all ingredients over ice until well chilled. Strain into a chilled martini glass. Garnish as desired and serve with intention.
Tasting Notes
Crimson Quay opens with baked orchard fruit, toasted almond, and gentle oak from Redbreast 12 Year. Sweet vermouth and tawny port deepen the profile with dried fig, subtle spice, and caramelized orange, while orange bitters lift the finish with brightness and balance. The result is warm, rounded, and lingering—an elegant expression of Irish craft in cocktail form.
Enjoy the Crimson Quay at Doyle throughout March or bring the ritual home and raise a glass this St. Patrick’s Day. Sláinte.
