This Irish Heritage Month, we at The Doyle Collection we are proud to honour Ireland's enduring cultural influence, recognising the artists, poets, playwrights and craftspeople whose work resonates around the world. Alongside Saint Patrick's Day, it offers an opportunity to acknowledge a living tradition that continues to shape Ireland's voice at home and abroad, one that also informs our Irish family ownership and the standards we uphold today.

THE BLOOMSBURY

At The Bloomsbury, our Irish heritage is marked across both bars, with celebrations taking place on 14th and 17th March. In The Coral Room, Champagne is poured alongside light bites and live Irish music, with the award-winning traditional Irish act License to Ceilidh playing on Saint Patrick's Day. Downstairs, The Bloomsbury Club serves Guinness on tap, freshly shucked oysters and Irish bar bites, while License to Ceilidh and ENBR perform from 9pm. Throughout the month, cocktails served in partnership with Waterford Crystal glassware are served featuring Redbreast 12 Year Old Irish Whiskey, including Atlantic Psalter and Blackwater Velvet.


THE KENSINGTON

The K Bar leads The Kensington's Irish Heritage Month programme. On 4th March, The K Bar is joined by Redbreast for a complimentary guided Irish whiskey tasting centred on Redbreast 12 Year Old and the craft behind it. Across the month, our partnership with Waterford continues with Green Shoots, poured in hand cut crystal, combining Redbreast 12 Year Old with Karminia, vermouth and Green Chartreuse to create a clean, herbaceous profile. Irish cheese toasties, Guinness bread, Irish coffee, chocolate Guinness cake and seafood chowder are available throughout the hotel.



THE MARYLEBONE

At 108 Brasserie, Irish Heritage Month is marked with Waterford's Lucky Charm, blending Redbreast 12 Year Old Irish Whiskey with Carpano Antica Formula, Southern Comfort, Maraschino cherry syrup, Angostura and Peychaud's bitters, served in Waterford crystal. On 14th March, a spirited brunch with live Irish music marks the celebration, featuring limitless starters and desserts, a main course and a complimentary Golden Eire cocktail crafted with Jameson Black Barrel Whiskey, Mandarine liqueur, elderflower cordial and rose wine.




THE DUPONT CIRCLE

Irish Heritage Month at The Dupont Circle brings together visiting talent and Irish craft. On 6th and 7th March, Ryan O'Sullivan, Season 22 winner of Hell's Kitchen, takes over The Pembroke with a menu reflecting the dishes that shaped his path from Ireland to international kitchens. Behind the bar, Waterford's Crimson Quay pairs Redbreast 12 Year Old and Waterford Single Malt with Tawny Port and vermouth in hand cut crystal. Doyle's Great Irish Tour menu also returns with cocktails inspired by Ireland's counties, each with their own distinct character.


THE WESTBURY

The Sidecar presents Waterford's Honey Psalm throughout Irish Heritage Month, served in a Lismore Martini glass as part of the collaboration. Redbreast 12 Year Old Irish Whiskey is combined with Valentia Island Vermouth, lemon juice and honey, delivering clarity and balance. Across the hotel, Irish coffee, Guinness cake and seafood chowder feature on menus, reflecting The Westbury's support of Irish producers and ingredients.




THE RIVER LEE

Waterford's Poetry and Rebellion anchors Irish Heritage Month at The River Lee, developed in collaboration with Waterford and served in Lismore crystal. Redbreast 12 Year Old Irish Whiskey is paired with homemade apple and fig vermouth, uniting local producers and house craft in one pour. Throughout March, Irish cheese toasties, Guinness bread, Irish coffee and seafood chowder feature across the hotel's dining spaces, reinforcing The River Lee's commitment to Irish ingredients and makers.
