How to make the perfect summer spritz

With summer here and all of Ireland basking in beautiful temperatures and sunny skies, we need a great summery cocktail to match the setting. No better fit than the Aperol Spritz. Down in Cork, The River Club Terrace is an ideal spot for summer time drinks al fresco, with the beautiful terrace perching over the water. 

The staff are experts when it comes to cocktails, and love mixing up a spritz in the sunshine.

“The Spritz is a wine-based cocktail commonly served as an aperitif in Northeast Italy, and when the sun shines we shine with it,” says Paul Bloomer, General Manager The River Club. “On a warm summer’s day with blue skies above, sitting on a beautiful terrace watching the world go by, an Aperol spritz is the perfect way to help let the worries of life flow past.”

So what exactly is Aperol?

“Aperol is very similar to that of Campari, with the bonus of over half the amount alcohol content. Aperol has a content of around 11%” which makes it an easier drink for warmer days.

Another bonus? It’s surprisingly easy to make. You’ll need… 

Ingredients

Prosecco, Aperol, Soda water, orange wedge, ice 

To make it, you simply combine all the ingredients into a glass over plenty of ice, garnish with a slice or wedge of lemon and serve. Use equal parts Aperol and Prosecco, and a dash of soda water (you can change these proportions to suit your own tastes). You usually use a tall stemmed glass, like a goblet or a wine glass. And if you want to, you can use kumquat instead of oranges.
