The Wine and Spirit Educational Trust (WSET) is an industry-recognised body that provides training to F&B professionals across the world. Its Level 1 and Level 2 qualifications provide employees with the skills and knowledge for serving wines or preparing cocktails day in, day out.
Proud to Lead
Proud to Lead is a 12-month leadership-development programme targeted at our high-performing team members who aspire to a management role. The programme covers such subjects as Personal Productivity; Effective Communication; Leading and Motivating a Team; and Finance and Revenue.
LEAD is a 12-month leadership-development programme to provide our managers with the essential skills with which to more effectively lead their teams. Among the 14 course modules are Mentoring; Networking; Revenue Management; Interviewing Skills and Talent Management.

Train the Trainer provides our mentors with the theory and practicalities of designing and implementing meaningful learning to a range of different styles, team members and abilities, ensuring our experts pass on their passion and knowledge in an effective way.
The Language of 5* Service

A two-day induction given to all new team members within their first few weeks of employment, this course covers everything from the history and culture of The Doyle Collection and employee perks to career developmental opportunities and emotional intelligence, profiling our different types of guests and exploring their cultural values.
